New Recipes

Hi Everyone!

I added this page to the blog so that we can upload recipes to share with each other. So if you have a min upload one of your favor meals or snacks!

  1. Avocado, Tomato and Feta Cheese Appetizer
    2 avocados, chopped
    4 roma tomatoes, chopped
    1 small red onion, chopped
    1 bunch cilantro, trimmed and chopped
    4 oz feta cheese, crumbled
    ¼ cup olive oil (light)
    1 Tbsp red wine vinegar
    1 Tbsp ground cumin
    1 tsp salt
    Combine the avocados, tomatoes and onion in a bowl. Mix gently. Stir in the cilantro. Add feta cheese, olive oil, vinegar, cumin and salt and mix until combined. Chill, covered in the refrigerator.
    Eat with chips or crackers, YUM!

  2. I make this for myself for lunch, or when the "family meal", doesn't fit my goals.

    Fresh and Easy Veggie Soup

    1 Roma Tomato, Chopped
    1 Cabbage leaf, Torn into bite size pieces
    Onion, chopped to taste (adds a lot of flavor!)
    2 Tbsp Shredded Chicken (I boil, shred, & season, 4 chicken breasts on the weekend to keep in my fridge & add to soup, salads,& meals during the week. Keeps things low fat & easy!)
    1 tsp Italian Seasoning
    Salt & Pepper to taste.

    Throw all items into a mug, fill with water, & microwave for 2 minutes. Voila! Fresh & Easy Veggie Soup. Lots of veggies, lots of flavor, low fat, low calories! =)

  3. Beef Tenderloin Steaks with Mushroom gravy

    BEEF:
    1 tsp salt
    1 tsp chopped fresh thyme
    1 tsp chopped fresh rosemary
    1/2 tsp black pepper
    4 garlic cloves, minced
    4 (4-oz) beef tenderloin steaks

    Gravy:
    1tsp extra light olive oil
    1/2 tsp. fresh thyme
    1 (8oz) pkg pre-sliced fresh mushrooms
    4 garlic cloves, minced
    1c. chicken broth
    1 T. water
    1 tsp cornstarch

    preheat oven to 450. combine first 5 ingredients. Coat both sides of steaks with cooking spray, rub steaks evenly with thyme mixture. Place steaks on rack of a broiler or roasting pan. Bake at 450 for 8 minutes on each side. Remove from oven, keep warm.

    Gravy:
    heat oil in a large skillet over medium heat. add 1/2 tsp thyme, mushrooms and 4 garlic cloves. Cook 5 minutes until mushrooms are tender. add broth, bring to a boil. combine water and cornstarch. add cornstarch mixture to pan, bring to a boil. cook 1 minute or until slightly thickened.

    This is great served with baked potatoe and a cooked green vegetable.

  4. Quick and Easy Soup (also Gluten Free)
    combine the following in a crock pot or large pot
    2 cans of diced stewed tomatoes blended
    1 can stewed tomatoes not blended
    1 lb cooked lean ground beef or ground turkey
    3-4 carrots sliced and steamed
    1-2 stalks of celery diced and steamed
    2 cans of corn drained
    2 cans of pork and beans
    1 can kindey beans drained and rinsed
    season to taste
    warm in crock pot 2-3 hours

  5. Diet Soda Cupcakes

    1 cake mix (any kind)
    1 can diet coke (or other variety)
    2 egg whites

    Mix the cake mix, diet coke, and egg whites. Mix well and pour into cupcake pans. Follow baking time on the cake mix. (I usually start
    checking mine about 10 min. ahead of that)

    ICING

    1 box sugar free fat free pudding
    1 cup fat free milk
    Mix together with whisk and let sit for 3-4 minutes. Then add
    1 8oz container of fat free cool whip
    Stir and top cupcakes
    Store in refrigerator

    These cupcakes are delish and only 1 weight watcher point!!! I know the cake mix still has sugar so they wont work for us right now. But if you ever need a treat that wont kill you on calories these are perfect!! My kids love them!!

  6. Mexican Lentil Casserole

    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1/2 cup chopped celery
    4 cups water
    1 cup uncooked lentils
    1 1/2 cups cooked brown rice
    1 6 oz. can tomato paste
    1 1 1/4 oz. packet taco seasoning mix
    1/2 tsp. chili powder

    1. In medium saucepan combine onion, green pepper, celery and water. Bring to boil over medium heat. Stir in lentils. Cover pot, reduce heat to low and simmer 40 minutes.
    2. Preheat oven to 375 degrees. Spray with nonstick cooking spray a 1 3/4 quart baking dish.
    3. Remove lentil mixture from heat and stir in remaining ingredients, mixing well. Spoon into prepared casserole.
    4. Bake uncovered for 25 minutes. Let stand 5 minutes before serving.

  7. this may sound simple but it is a great way to get your vegetables and protein and fill you up! Beware of what you add!
    Green Salad
    Handful of fresh spinach
    Handful of green lettuce
    1 tomato chopped
    1/2 cucumber chopped
    shredded carrots
    almond slivers
    tuna fish or chicken (mixed with light mayo or miracle whip)
    I throw the vegetables on a plate and add the tuna fish or chicken on top and enjoy-I don't like a lot of mayo/miracle whip but when thrown on the salad I don't need dressing and it fills me up and I feel great. Sometimes I add salmon on top. If I use salmon then I mix some vinegar and olive oil and enjoy!

  8. Apple Celery Chicken Salad –Jamie Garner
    Servings:2
    Time:45min
    Ingredients:
    2 Chopped apples
    2 chopped celery stalks
    1 Tbsp honey
    1 Tbsp olive oil
    1 Tbsp balsamic vinegar
    Salt
    Pepper
    3oz. shredded chicken
    1. Combine the apples and celery and chicken. set aside
    2. To prepare the dressing, mix together remaining ingredients (lemon
    juice may be substituted for vinegar.
    3. Add apple mixture and combine thoroughly.
    Serve in a half of piece of pita bread! Oh so yummy!!

  9. Blueberry yogurt and granola
    1c dole frozen wild blueberries
    4oz light vanilla yogurt
    put blue berries in blender and crush add yogurt and mix toether. Enjoy(should be cold and thick)
    add granola
    Mix together:
    6c oatmeal
    1c wheat germ
    1t salt
    1c brown sugar
    1-3t cinnamon
    Mix together than add to oat mixture:
    3/4c canola oil
    1/3c water
    1t vanilla
    bake at 200 for 30 minutes. Stir frequently.

  10. Core Banana Muffins

    3 1/2 Cups uncooked old fashioned oatmeal
    1 Cup Cream of Wheat, 2 1/2 Minute (dry)
    1/2 Cup Unsweetened Applesauce
    2 Cup Fat-Free Skim Milk
    3 tsp baking powder
    2 tsp baking soda
    1 tsp salt
    1 tsp ground cinnamon
    1/2 Cup Splenda
    2 Cups of Mashed ripe bananas

    Mix all ingredients and spoon into sprayed muffin pans. Cook at 350 for 20 min. Can also be made in mini muffin tins

  11. Santa fe Chicken

    4-5 chicken breasts
    1 cup salsa
    1 can black beans drained
    1 can corn drained

    Put all in crockpot and cook on low for 6-8
    hours. Add 1 cup more salsa and 1 8oz fat free cream cheese an hour before serving. Serve on whole wheat tortillas or on a salad. I have also added some fajita seasoning to this and the cream cheese is optional. It is yummy without it too.

  12. One of my favorite snack is peeling and coring and appple. Place it in a bowl with a little water and wrap it with plastic wrap. Microwave for 4 minutes! Put cinammon on it! So Yummy!!!!!!!!1
